Red Velvet Cake-tastrophy

Well, it's the day after Christmas and a lot of people will be hitting the stores to either return a gift or shop for discounted Christmas decor. As for me, I didn't get out of bed until 10:00 this morning and I was sure to thank my children for being content with exploring all their new stuff while I slept. Though I did sleep in, I arose to a disastrous mess of a house - not just from the kids, but from all the baking and running and returning with boxes and bags. Now we have the job of finding a home for all the stuff and what should we do with all the cookies, half eaten cakes and rice crispy treats?




**************Christmas Morning***************
As usual, we were up until about 2:30 a.m. Christmas morning wrapping and baking (baking for the trip to my sister-in-law's house for Christmas at HubbaHoney's side of the family). Can you guess what time the HubbaBrood was up? 4:32 a.m. They were so excited BUT, I was not about to be up at that hour of the morning knowing I had to spend the entire day at someone else’s house trying to stay awake. We told the kids they could go downstairs and look at the stuff until we got up but we quickly changed our minds when we realized that HubbaDood is at the stage where he counts all the gifts to see how many each person got. So HubbaHoney redirected them to their rooms - HubbaDette fell back to sleep but HubbaDood lived in torturous misery until about 8:30 when we figured it was a decent hour to be up.

I made sausage and pancakes for breakfast while I also made deviled eggs, cole slaw, and a red velvet cake. We were supposed to be at my sister-in-laws by 11:00 to visit and then eat at 12:00. Well, I made the cake and part of the icing the night before; I boiled the eggs and prepared the filling but didn't fill the eggs; and made the cole slaw Christmas morning. Okay, I have made red velvet cake more times than I can count and I have only messed it up the first time and that was because mom-in-law left out a key trick and it turned out horrible. This happens to be HubbaHoney's favorite cake and I make it for his birthday as well. Red velvet cake is a tradition on HubbaHoney's side of the family for Christmas and for several years now I have been in charge of the red velvet cake BUT, probably not any more:


Things don't always turn out the way we'd like.






Here it is on display at sis-in-law's. I can't believe people actually ate it. If you look to the right of the cake you will see the plastic tub-o-frosting that kept sliding off the cake. I had doubled the frosting because this is a three layer cake and plenty of frosting makes it better. That's four sticks of butter - wasted.

He wore this for three days. I do believe my son is going to be an outdoorsman. I guess HubbaHoney's gonna have to learn to hunt too.

HubbaDette loved these jammies she got from her aunt - they have feathers at the bottom of the shirt and pants.

I need a nap now.

i would attempt to be kind about the cake...but that is a travesty!

4 cubes of butter is the problem. no more shall you use that much. from now on, you will only use about one cube of margerine. and you will whip it with your mixer along with some powerdered sugar and some vanilla. please....

other than that? sounds great!

R - It was okay unless you had texture issues.

AuntJ - I think you're just being too kind about that cake. I'm not a fun mom - I struggle with fun. I don't think they know that though.

Uncle J - Thank goodness for Batman!

Badoozer - It WAS a travesty. I'm tempted to make another one for no reason just to make myself feel better.

Mama - Apparently the portion I made the night before was too cold to mix with the butter that had sat out over night. I'm going to just stick with the way I've always done it and not deviate from that plan.

Fred - I've slept quite a bit but I need more. Did you like the cake picture - all drippy with butter fat?

That's the thing about red velvet cake: if it's still good on the inside, it doesn't matter what it looks like on the outside.

Sounds like you guys had a great Christmas. Things were well down near the caveland, too.
